Renowned ex-River Cottage game chef Tim Maddams has created a bespoke breakfast and lunch menu for the Enclosure Restaurant at this year’s GWCT Scottish Game Fair, sponsored by NFU Mutual.
The three-day event, taking place from Friday to Sunday, September 24th to 26th, at Scone Palace in Perthsire, will delight gastronomes as Tim’s menu reflects his passions for fine Scottish produce and wild food.
Now based in Moray, he moved to Scotland last year after a lifelong love affair with the country.
Located in the GWCT Members Enclosure, the table service restaurant is exclusively for GWCT members on the Friday with Grouse, Pheasant and Stag packages and open to both members and non-members holding Grouse, Pheasant and Stag packages on the Saturday and Sunday.
Highlights from breakfast menu include a smoked haddock potato cake with poached egg and the standout seasonal dish from the lunch menu is the pulled wild Scottish venison suet pudding.
