We will explore various techniques, including using a salt brine, a salt-vinegar brine, and extracting water from vegetables through salting. By tasting different samples, we will discuss which method is best for various vegetables and the unique flavours each technique produces.

Incorporating foraging, we will identify different wild plants that can be preserved through fermentation and how to pair them with organic vegetables. Using cabbage as the base, you will craft your own kraut, experimenting with different vegetables and wild flavours.
